There are many mock draft simulators available. The general idea of a mock draft simulator is:
* You draft for one team or for many teams.
* Some simulators allow multiple live players.
* The simulator makes its selections based on a player ranking, which it shows you, some random component, and other factors.
* You typically trade with the simulator or with other live players.
NFL Mock Draft Database

* Simulator selections are controlled by both the ranking and a set of configurable parameters (positional value, need, and randomness).
* The simulator tells you which teams are interested in making trades with you, but it is up to you to propose the trade. You can also choose to trade with teams who do not indicate interest, but I think you get better terms with teams who do indicate interest.
* Trades may include both draft slots and one current player from the roster of each trade partner, although not players just drafted.
* Allows you to click on draftable players and see their PFF stats and evaluations.

* They have a mode which allows you to trade against the actual draft - but that is only available on draft day and the few days following.
The Draft Network used to have a nice very mock draft simulator. Then they scrapped it and developed a new version in beta which was not quite as nice. Then they appeared to go out of business. Since they have returned, I don't see a mock draft simulator on their website.
There are a few other simulators which are just NFL Mock Draft Database rebranded.
There could be others.
